<p><strong>Foil wrapped cooking</strong> is not exactly new but we have to admit it is something very handy, requires very little cooking gear, doesn’t take a very long time to clean after it and it has the advantage of being prepared with nothing but the camp fire you use to grill and make smores.</p>
<p>Using foil cooking you can prepare meat, vegetables and desserts with very little fuss and nothing but a foil cooking tray.</p>
<p>The meat is easy to make by simply marinating it and placing it inside the tray along with the veggies you plan to use for garnish. Cover with foil and let it cook smoothly at the camp fire. You will have a complete meal in a short time.</p>
<p>If you are a vegan, cooking just veggies with a drop of seasoning and a bit of Caesar dressing can be done exactly the same.</p>

<p>There are a number of <strong> recipes for making fish</strong>, but there are basic spices a person should usually  have on a camping trip.</p>

<p>Some will want to bring everything  but the proverbial kitchen sink, while others will only take the absolute bare  minimum.</p>
<p>One aspect of camping that can either be a lot of fun or can  be a huge headache is cooking. Approach it with the right attitude and everyone  involved should have a great time.</p>
<p>There are some essentials that will make campsite cooking  easier. Aluminum foil is invaluable when camping. A skillet can also be  helpful. Of course, it will also depend on if someone is backpacking or not. <h3>Breakfast Burritos</h3>
<p>Considered the most important meal of the day, breakfast  will give the body the necessary energy to get through the morning. If there is  access to a frying pan, breakfast burritos are easy to make and can serve  several people quickly.</p>
<p><strong>Ingredients</strong></p>
<p>8 eggs, beaten</p>
<p>1-8 oz bag of shredded cheddar cheese</p>
<p>½ medium onion, minced</p>
<p>½ pound of bulk sausage</p>
<p>8 flour tortillas</p>
<p><strong>Preparation</strong></p>
<p>Cook the sausage until no longer pink, stirring frequently  to avoid sticking. While the sausage is cooking, wrap the tortillas in aluminum  foil and place on rack above fire.  Watch  carefully; it doesn’t take long to warm the tortillas.</p>
<p>Carefully drain all but a small amount of grease from the  pan. Add eggs and onion. Cook until the eggs are no long runny. Remove from  heat.</p>
<p>Build the tortilla by placing a spoonful of the egg and sausage mixture  in the middle of a tortilla. Top with cheese.</p>
<p>Roll up the tortilla and enjoy.  (Hint:   Keep extra packets of taco sauce from Mexican fast food restaurants.  They don’t take up much room and can add a lot of flavor to the burritos.)</p>
<h3>Baked Fish and Vegetables</h3>
<p>This is a great recipe to use for cooking the day’s catch.  Simply clean the fish as you wish, and then  grab your aluminum foil.</p>
<p><strong>Ingredients</strong></p>
<p>2 fish fillets</p>
<p>3 potatoes, peeled and cut into one-inch chunks</p>
<p>½ of a thinly sliced onion</p>
<p>½ of an onion cut into chunks and separated</p>
<p>1 green pepper, cleaned and cut into chunks</p>
<p>2 tbs of butter</p>
<p>Lemon juice</p>
<p>Salt and pepper to taste</p>
<p><strong>Directions</strong></p>
<p>Pull off three pieces of foil.  If it’s not heavy duty aluminum foil, then  fold it in half before use. Place one fish fillet in two pieces of foil. Add  one tablespoon of butter on top.</p>
<p>Add a very small quantity (1/2 tsp) of lemon juice on top of  the fish and a couple of the slices of onion. Wrap in foil and place on  grill.  While the fish are cooking, place  the potatoes, pepper, chunked onion and some salt and pepper in the other foil  packet.</p>
<p>Wrap and place on the grill above the campfire [<a href="http://www.eartheasy.com/play_campfire_cooking.htm" target="_blank">Campfire Cooking</a>]. Check the  fish often. It’s done when it is white and flaky.  The vegetables will cook quickly and can burn  to the foil, so be sure to keep an eye on them as well.</p>
<p>When both are done,  remove from heat and place on plate. Clean up is a breeze.  (Hint:   prepare the vegetables at home and place in zip lock bags to save time.)</p>

<p><strong>Dutch Oven Chowder</strong></p>

<p>Sautéed fillets are tasty, but a  basic Dutch oven Fish Chowder is even better. The only equipment you will need  is your Dutch oven.</p>
<p><strong>Ingredients</strong></p>
<ul>
<li>2 ounces bacon, diced and cooked</li>
<li>2 sliced onions</li>
<li>1 can of evaporated milk (13 ounces)</li>
<li>1 can of jarred or canned potatoes or fresh if  you prefer, diced</li>
<li>6 fish fillets cut into 1” chunks</li>
<li>Salt and pepper to taste</li>
<li>1 TBSP butter</li>
<li>water</li>
</ul>
<p>Use bacon grease to sauté the onions and potatoes until they  are browned. Adding one quart of water to the potatoes and onions, bring to  boil and simmer for at least ten minutes.</p>
<p>Add the fish fillet and continue  simmering for 5 to 7 minutes or until cooked through. Finally add the evaporated  milk and salt and pepper to taste. Stir well. Just before serving the Chowder,  add the butter. Serve with oyster crackers for a savory meal.</p>
<p><strong>Tasty Dutch Oven  Treats</strong></p>
<p>This is sure to hit the spot when cravings for sweets come  calling. Apple Torte will make the perfect ending to any meal and in order to  prepare, it needs only a paring knife, frying pan and of course, your Dutch  oven.</p>
<p><strong>Ingredients</strong></p>
<ul>
<li>apples</li>
<li>sugar</li>
<li>cinnamon</li>
<li>2 9” premade pie crusts</li>
</ul>
<p>Peel and slice the apples using a paring knife to core. Heat  butter in a hot frying pan and add apples and sugar until the apples begin to  caramelize.</p>
